Hyatt Regency Harare The Meikles unveils a new hub for Indian cuisine

Are you a fan of Indian cuisine, or have you been dying to try some?

Well, Hyatt Regency Harare The Meikles is your answer. With its multi-million dollar refurbishment still in full swing, the hotel continues to innovate and bring new products to the market.

The latest product can be found by the poolside, accompanied by the ambience of Harare’s evening sky and the stillness of the sky-blue waters.  From Dusk to Curry by Chef Kader is served daily at the Pool Bar Restaurant from 6:00 PM to 10:00 PM. Every evening, the restaurant transforms itself into a home of India’s finest dining.

“We intentionally designed the experience to be available throughout the week to give both our hotel guests and the Harare community consistent access to Indian dining in a relaxed, social setting,” hotel marketing and communications manager, Gillian Makuza explained.

“The concept was largely guest-informed. Over time, we began to notice increasing interest in more flavour-forward evening dining options within Harare. While the Pool Bar has traditionally performed strongly during the day, guest preferences indicated an opportunity to further enrich the evening experience.\"

The Hyatt Regency Harare The Meikles believes the concept enhances value in three key ways.

“First, it maximises the versatility of the Pool Bar space, allowing us to deliver two distinct guest experiences within the same venue, relaxed cocktails by day and Indian dining by evening.

“Second, it enhances the range of dining experiences available within the hotel by introducing a more extensive Indian offering, where previously the selection was limited. This provides returning guests with additional dining variety within the property,” Makuza said.

“Third, it supports our ongoing connection with the local community. Harare’s dining audience continues to show interest in diverse global flavours, and this evolution allows us to respond thoughtfully to those preferences.”

The menu draws inspiration from the rich diversity of Indian cuisine, guided by Chef Kader’s commitment to authenticity, balance and refinement.

“What began as a small Indian selection within the daily Pool Bar menu presented an opportunity to further develop the offering. In response, the concept evolved into the Pool Bar Restaurant’s more comprehensive Indian dining experience. Feedback from guests who have experienced the menu has been consistently positive, particularly regarding Chef Kader’s flavour profiles and warm hospitality.

“Our focus was on creating dishes that honour traditional Indian flavour profiles while presenting them in a way that feels contemporary and approachable for our guests. Great attention was paid to the layering of spices, the depth of slow-cooked curries, and the overall harmony of the menu.

“Importantly, the inspiration was not only culinary but also experiential. We wanted a menu that feels well-suited to the relaxed yet premium environment of the Pool Bar Restaurant.”

The hotel’s target market is clearly defined around experience-seeking diners. This includes in-house hotel guests, Harare’s professional and social community, couples and small groups seeking evening dining options, and food enthusiasts interested in exploring global flavours.
